Chocolate Orange Banana Bread

A match made in Christmas heaven, think Terry's Chocolate Orange meets everyone's favourite banana bread! A festive treat we'll certainly be baking this week.

 

INGREDIENTS:
2 tbsp agave 
3 ripe bananas
1tsp vanilla extract
2 heaped tbsp vegan butter
1tbsp coconut yoghurt 
100 g light brown sugar
80 ml OJ
2 tsp orange zest
80 ml Vanilla Nusse
2 tsp lemon juices
275g flour
1 tsp bicarbonate of soda
1 tsp baking powder
66 g dark chocolate
CHOC GANACHE
33 g melted dark chocolate
1 tbsp agave syrup
4 tsp corn flour
1 tsp of melted coconut oil
40 ml OJ
DRIZZLE
40 ml OJ
1 tbsp icing sugar
1 tbsp cornflour 
1 tbsp coconut yoghurt 
25 ml of OJ

METHOD:

1) Preheat the oven to 180 (fan).

2) Add your lemon juice and m’lk together, and let sit until thickened.

3) Mash your Nanas in a mixing bowl, adding in the agave, vanilla, butter and yoghurt. Mix well.

4) Sieve in your sugar and mix again.

5) Then, once thickened, add in half of the lemon juice and m’lk mix followed by half the flour (sieved). Mix well, and repeat for the other half.

6) Add in your OJ and zest, mix well adding in more flour if necessary.

7) Lastly, chop up your Choccy into large chunks and add this, followed by the bicarbonate of soda and baking powder into the mix. Give it one last stir then transfer to your lined loaf tin. Bake for 35mins.

8) After 35 mins, pop a "foil tent" over the top of your bread to prevent burning, and leave to bake for a further 35 mins.

9) Transfer to a wire rack, and let cool completely.
