    Kale is a very nutritious cruciferous vegetable that is very high in vitamin C, calcium, chlorophyll, beta-carotene, lutein and zeaxanthin. It also contains B-vitamins, vitamin K, folate, magnesium, phosphorus, copper, iron, potassium, and the antioxidants quercetin (a natural antihistamine) and kaempferol. Kale is also rich in sulphur which is helpful for detoxification.
